BBQ Style Baked Beans
The super fancy kind, with ALL the fixings. Goes great with the meatloaf or meat bucket, as a side for a potluck, or as a particularly bean-heavy main dish (there is plenty of meat, after all).
Required Ingredients
- 1/2 lb ground beef or pork (feel free to freeze the other half, or split it into another recipe)
- 1 small sweet onion
- 1/3 cup white sugar
- 1/3 cup brown sugar
- 1/2 cup favorite ketchup-based BBQ sauce
- 1/4 cup ketchup
- 2 tablespoons molasses
- salt and pepper
- 1 16 oz can each of kidney beans (NOT drained), butter beans (drained), and pork and beans (drained)... OR one bag of dried kidney beans, run through the instant pot with an onion (also drained).
- 1 pack of the cheapest possible stupid store brand bacon
Optional Ingredients
- dijon mustard, to taste
- 1 smaller can of petite diced tomatoes, drained
- 1 can of corn, drained
Process
- Preheat the oven to 350 F
- Peel and finely dice the onion, then brown the ground meat with the onion in it. Drain and set aside.
- Cut into bits and stir fry until crispy the stupid cheap bacon. Use the grease to grease a casserole dish at least 2 1/2 quarts in volume.
- Combine absolutely everything being used in a bowl, and then dump into the casserole dish (so as not to disturb the grease)
- Bake for an hour, stirring once at the halfway point.
- Serves 8-10 people easily
