Shepherd's Pie
Technically, unless it contains lamb, it's a cottage pie. Either way, an excellent all-in-one nutritional food.
Required Ingredients
- Red potatoes, about 8 (or just use the Garlic Mashed Potatoes recipe)
- bag of frozen peas and carrots
- Ground beef, 1 lb (or ground lamb, 1 lb, but not both)
- brown gravy mix (1 packet, maybe 2 for extra juicy)
- salt and pepper to taste
- milk (for potatoes)
Optional Ingredients
- Sweet onions
- cheddar cheese
Process
- If not using the Garlic Mashed Potatoes; roughly chop, boil, and mash the potatoes, with milk to get a stiff but creamy consistency. Season with salt and pepper until they could be eaten alone.
- Brown and drain the ground meat.
- Follow preparation instructions on the peas and carrots. Microwaving is fine.
- If using onion, chop into bite sized pieces and cook until soft.
- Prepare the gravy mix according to the instructions on the package. Season with salt and pepper.
- Put into corningware dish the peas and carrots, meat, gravy, and optional onion. Stir.
- Optionally, sprinkle this with cheddar. Over the meat and under the potatoes, yes.
- Spoon the mashed potatoes over the top, and spread them around until there is a fairly even layer.
- It is okay to chill the pie at this time for later. Freezes well, or just in the fridge for later in the same week.
- Bake at 350 F until warm all the way through. This is faster if made fresh (about 15 minutes), and slower from the fridge (up to an hour). If frozen, thaw in the fridge overnight before attempting to bake.
- Serve generously :)
