Microwave Fudge

A rich snack, great for impressing in-laws and employers around the holidays, and possible to make even if you have only a microwave, no stove required.


Chocolate Fudge

  1. put all ingredients in a microwave safe bowl
  2. Microwave for one minute at a time, stirring in between, for 4-7 minutes (until clearly boiling, but not separated)
  3. Optionally, add mix-ins. Walnuts are traditional, but also consider chopped cherries, pecans, peanut butter chips, or mini marshmallows.
  4. Pour into greased 8x8 pan (or one 10 inch round pan) (or double the recipe for a 9x13 pan) and chill for at least two hours or overnight (easier to handle if frozen, fridge will do, countertop takes a while but is possible)
  5. Cut into squares and arrange artistically for best effect

White Chocolate Fudge

  1. put all ingredients in a microwave safe bowl
  2. Microwave for one minute at a time, stirring in between, for 4-7 minutes (until clearly boiling, but not separated)
  3. Optionally, add mix-ins. Peppermint or crushed oreos work well for white chocolate.
  4. Pour into greased 8x8 pan (or one 10 inch round pan) (or double the recipe for a 9x13 pan) and chill for at least two hours or overnight (easier to handle if frozen, fridge will do, countertop takes a while but is possible)
  5. Cut into squares and arrange artistically for best effect

Peanut Butter Fudge

  1. put peanut butter and butter in a microwave safe bowl
  2. Microwave for one minute and stir, then one more minute until melted.
  3. Sift in powdered sugar, stirring, until the entire concoction is paste, but not changing color. Lumps mean too much sugar; add a little extra butter or just stir really hard.
  4. Optionally, add mix-ins. Chocolate chips (or a batch of chocolate fudge on top) makes a delightful peanut butter cup... or leave tradition behind and add graham cracker crumbs and jam for a PBandJ flavor
  5. Spoon into greased 8x8 pan and spread flat (or one 10 inch round pan) (or double the recipe for a 9x13 pan) and chill for at least two hours or overnight (easier to handle if frozen, fridge will do, countertop takes a while but is possible)
  6. Cut into squares and arrange artistically for best effect

Brown Sugar Fudge

  1. put all ingredients in a microwave safe bowl
  2. Microwave for one minute at a time, stirring in between, for 6-10 minutes (until clearly boiling, but not separated)
  3. Optionally, add mix-ins. Maple extract and cinnamon is good, or lightly toasted coconut and almonds.
  4. Pour into greased 8x8 pan (or one 10 inch round pan) (or double the recipe for a 9x13 pan) and chill for at least two hours or overnight (easier to handle if frozen, fridge will do, countertop takes a while but is possible)
  5. Cut into squares and arrange artistically for best effect
