Warm Blueberry Sauce
Sweet, tangy, warm, and perfect for pancakes. This recipe also works by replacing the blueberries with blackberries, raspberries, or peaches. It's kind of related to a very quickly made jam.
Ingredients
- 2 cups blueberries (fresh or frozen)
- 1/4 cup cold water (omit this if using frozen blueberries)
- 1/3 cup packed brown sugar
- 1 tablespoon cornstarch
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 2 tablespoons lemon juice
Process
- Combine sugar, cinnamon, cloves, and cornstarch in a 1 quart glass jar without a lid, or a microwave bowl with a lid.
- gradually add water (if using fresh blueberries) and lemon juice, whisking until blended.
- Stir in blueberries
- If using a jar, cover with parchment paper (NOT THE METAL LID).
- Microwave 2 minutes at a time, stirring each time, for 5-6 minutes until thick and bubbly
- Serve over pancakes, biscuits, toast, or just eat with a spoon.
