Required Ingredients
- bag of fifteen bean soup mix
- sweet onion
- can of diced tomatoes
- leftover ham bone or country ham hock
- bay leaves
- garlic
- salt and pepper

- apple cider vinegar or lemon juice
- tabasco sauce
- eight cups of stock OR water with salt or bouillon
Optional Ingredients
- additional seasonings
- more ham, pulled pork, or ground pork
- rice, toast, or cornbread for serving
- cheese
Process
- Dice the onion.
- Wash the beans.
- In the Instant Pot, put the ham bone, beans, the flavoring packet that came with the beans, onion, bay leaves, garlic, salt and pepper, any other powdered seasonings, and the stock or water.
- Set the instant pot for 45 minutes at high pressure. Let sit afterwards for fifteen minutes to naturally vent before releasing the pressure.
- ENSURE THAT THE BEANS ARE DONE. If they're not, back in the pot for 5-10 minutes at pressure. DO NOT ADD ANYTHING ELSE BEFORE THE BEANS ARE COOKED THROUGH. Vinegar will prevent them softening.
- Once the beans are cooked enough to eat, add Tabasco, lemon juice, tomatoes, and optional extra pre-cooked meat. Serve generously with starch of choice. Some heathens may choose to add cheese.
